*This meal plan assumes you have and have permission to use a microwave, mini-fridge, and slow cooker.

My meal plans are designed to feed people for cheap. If you are looking for low carb, paleo, gluten-free, keto, vegan, organic, or some other trending food craze please look elsewhere. This site is not for you.

Prep work:

Cook a dozen eggs in a slow cooker with the water high enough to cover the eggs for 4 hours on low. Place the cooked eggs back in the carton and into the refrigerator. You will be using hard boiled eggs throughout the week.

Slice cantaloupe into bite size pieces and store in refrigerator.

Breakfast

Lunches

Tuna salad sub (can of tuna, celery, and mayo mixed together on a sub roll with lettuce) celery sticks with peanut butter, grapes

Hard boiled egg, peanut butter filled celery sticks with fruit salad (cantaloupe chunks and grapes)

Salad (lettuce, celery, cucumber, egg, string cheese sliced into chunks) with salad dressing

Egg salad sub (egg, mayo, and celery with lettuce)  with peanut butter filled celery sticks

Tuna salad sub with cantaloupe

Hard boiled eggs, string cheese, fruit salad

Dinners

 

Meatball subs with salad. Cook 10-12 premade frozen meatballs in slow cooker with half a jar of spaghetti sauce in the crockpot for 2-3 hours on low. Shred a string cheese. Serve meatballs in sub roll and top with shredded cheese. Make a salad of lettuce, celery, and dressing as a side. Save half the meatballs and sauce for the next night.

2. Spaghetti and Meatballs. Break individual serving of noodles and place in microwave safe bowl. Cover with water an inch or two above the noodles. Put plate under bowl to catch any spills. Microwave for 3 -4 minutes longer than the recommended cook time on the spaghetti noodle package. Strain and top with reheated meatballs and sauce from the previous night. *Be very careful. Water will be very hot and can burn you.

3) Meatballs and Gravy over Rice. Cook a serving of rice according to package directions. Place 5 – 6 meatballs in a microwave safe bowl with an envelope of brown gravy mix. Add water and cook according to package directions. Stir. Check meatballs to ensure they are cooked thoroughly. Continue to heat in 30 second increments until meatballs are warmed through. Serve over rice. Add a salad with dressing as a side.
