One Week for Under $50

*This meal plan assumes you have and have permission to use a microwave, mini-fridge, and a slow cooker.

 

My meal plans are designed to feed people for cheap. If you are looking for low carb, paleo, gluten-free, keto, vegan, organic, or some other trending food craze please look elsewhere. This site is not for you.

 

Breakfasts

 

You need something you can grab easily as you rush out the door in the morning. Yogurt tubes are better than yogurt cups since you don’t need a spoon. Bananas don’t last very long so those need to be eaten in the beginning of the week. Apples can last much longer.

 

Yogurt tubes come in packages of 8 and granola bars come in packages of 6. You‘ll have more than is included in this meal plan to have as snacks.

Lunch

 

These lunches can be made ahead. Tortillas take up less space and last longer than bread. Perfect for a college student with limited space.

 

  1. PB&J tortilla roll-up, chips, apple
  2. Pepperoni, cheddar cheese cubes, banana
  3. Apple slices and carrot sticks with peanut butter, chips
  4. PB&J tortilla roll-up, carrot sticks with ranch, chips
  5. Pepperoni, cheddar cheese cubes, apple
  6. Apple slices with peanut butter, cheese cubes, chips
  7. PB&J tortilla roll-up, carrot sticks with ranch dip, chips

 

Dinner

 

Skinless boneless chicken breasts are often on sale for $1.79/lb at Aldi. The usual price at my local Aldi is $2.49/lb. Either way, that’s a good price for protein.

Salsa Chicken – Place two chicken breasts in the slow cooker with half a jar of salsa in the morning. Set your slow cooker to low. Let it cook for at least six hours. When you’re ready for dinner, shred the chicken in the crockpot using two forks to pull the chicken apart. Serve on ⅓ of the chicken on tortillas with shredded cheddar and lettuce. Add a lettuce and carrot salad with ranch dressing as a side. Save the remaining chicken for the next two nights, half for a salad and half for quesadillas.

 

2)  Salsa Chicken Salad  and Mac n Cheese- Reheat leftover chicken from the previous night in the microwave. Serve over lettuce and chopped carrots with ranch dressing for a main course salad. Cook creamy mac and cheese according to microwave directions.

 

3) Quesadillas – Top a tortilla with shredded cheddar and shredded salsa chicken. Microwave for one minute. Serve with tortilla chips and salsa.

4) Italian Chicken – Place 2 chicken breasts in the slow cooker in the morning. Pour about half a bottle of Italian salad dressing on the chicken. Cook on low for at least 6 hours. Serve with half a can of a vegetable of your choice and reheated creamy mac and cheese leftover from the other night. Save the second chicken breast for the next day.

 

5) Chicken Salad Wrap – Chop leftover chicken from the previous night into bite size pieces. Mix with two or three tablespoons of mayonnaise. Chop half a carrot into small pieces to add crunch to your wrap. Serve on tortilla with lettuce. Side dishes are remaining canned vegetable, tortilla chips, and salsa.

 

6) Ranch Chicken – Place remaining chicken in slow cooker. Pour a can of condensed cream of celery on top. Sprinkle with one envelope of ranch seasoning. Cook on low for at least six hours. Cook one cup of rice in microwave per package directions. This should make approximately two cups of cooked rice. Shred chicken in sauce. Serve half over half of the cooked rice. Save the other half for the next night.
